Ingredients
- 250 g AP flour
- 20 g butter
- 10 g oil
- 150 g boiling water
- ½ tsp salt
- 1 tsp baking powder
Method
- Pour boiling water into the flour, salt, and baking powder mixture and mix with a utensil until mostly incorporated.
- Once cooled enough to handle, knead the dough just enough to get everything well incorporated.
- Place the dough in a bowl, cover with plastic wrap, and let it rest for 30 minutes.
- Separate the dough into eight equal portions, about 52 grams each, and keep them covered to prevent drying.
- Roll out each tortilla about halfway, coat in flour, and stack them. Once all are partially rolled, flip the stack and finish rolling each one out.
- Preheat a comal to slightly less than medium heat.
- Cook on the first side for about 10 seconds, flip and cook until brown spots appear on the bottom, then flip one more time to finish cooking.
- Transfer cooked tortillas to a clean kitchen towel to keep them warm and soft.
Notes
If you want your tortillas to be fluffier, use 1 full teaspoon of baking powder.
